Moist Fruit Bread
Recipe
Soak the dried fruits in warm water for approx. 30 minutes, drain and chop into small pieces.
Mix flour and salt. Dissolve yeast in the water, add to the flour and knead into a soft dough. Fold in the dried fruits and nuts by hand and let rise to double its size.
Line a cake tin (30 cm) with baking paper. Remove the dough from the bowl, fold the edges towards the centre all around, turn over and place in the tin, pressing down lightly with wet fingers. Let rise again until approx. 1 cm below the rim of the tin.
Baking: 30 minutes in the lower half of the oven preheated to 200°C, remove the bread from the tin and bake for a further 10 minutes until crispy.
Note: Less yeast can also be used, in which case the dough needs more time to rise.
